Season of the Rising

The sap is rising, and the winemakers at the Lurgashall Winery are starting to tap their stand of silver birch for this year's batch of silver birch wine. We were there at the weekend with natf, picking up some wine to take to saffronrose on our next US trip.

I took a walk into the muddy wood to take some photos of the tapping under way.

The wood was full of jars and cans, all slowly filling with the white, sweet sap as it rose from the roots, where it had been stored all winter.

Very poetic, and all that, but I'd have expected it to be newly generated. Or are birches members of the onion family?

My plant biology is extremely rusty. I suspect you are right.
